Baked Avocado with Eggs and Bacon

Ingredients

2 medium ripe avocados

4 eggs

2+ pieces cooked bacon, crumbled

Salt

Pepper

Fresh parsley or chives (optional)

Chili powder (optional)

Tabasco or other hot sauce (optional)

Instructions

  1. Preheat oven to 425°.
  2. Cut avocados in half and scoop out some of the flesh so it’s wide enough to hold the egg. 
  3. Place avocados upright in a square baking dish and arrange them so they won’t tip over.
  4. Crack the eggs inside the avocado taking care not to crack the yolk. Sprinkle with salt, pepper, and a tad chili powder – a pinch will do.
  5. Bake for 15 minutes or until egg whites are no longer translucent. 
  6. Sprinkle with bacon, chopped herbs, and hot sauce.
  7. Enjoy!
